1 pound fresh tilapia fillets, ½ inch thick
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon ancho chili powder
½ teaspoon ground cumin
¼ teaspoon ground black pepper
12 7-8 inch flour tortillas
Salsa, chopped tomatoes, lettuce for garnish (optional)


  1.  Preheat grill to medium heat. Place tilapia in a 2-quart square baking dish. Whisk together lemon juice, oil, ancho chili powder, cumin, and pepper and pour over fish and turn to coat. Cover and marinate in the refrigerator for 15 minutes.
  2. Remove fish from marinade and place fish on grill rack directly over medium heat.  Grill for 4 to 6 minutes or until fish flakes when tested with a fork.  Remove fish from grill. Stack tortillas, wrap in foil and place on the grill, turning once until warmed.
  3. Transfer cooked tilapia to a cutting board and flake into pieces. Serve in warmed tortillas. Top with salsa, tomatoes and lettuce if desired.
