Lemon Marinated ChickenIngredients

Marinade

1 Tbsp. fresh chopped rosemary or 1 tsp. dried rosemary leaves
1/8 tsp. pepper
2 Tbsp. lemon juice
1 Tbsp. white wine or water
1 Tbsp. oil
2 tsp. honey
1 tsp. low sodium soy sauce
1/2 tsp. Dijon mustard
1/2 tsp. lemon peel

Chicken

4 skinless, boneless chicken breasts (about 1 lb.)

Directions

In a shallow dish, combine all marinade ingredients; mix well. Add chicken, turn to coat. Cover; marinate in refrigerator 20 to 30 minutes.

When ready to broil or grill, spray grill rack with vegetable cooking spray. Place chicken on grill over medium heat 4 to 6 inches from charcoal. Cook 8 to 10 minutes on one side, basting with marinade. Turn; continue cooking and basting 8 to 10 minutes longer or until chicken is fork tender and juices run clear.
