Oven Beef Stew - CHI Health, Nebraska (NE) - Southwest Iowa (IA)


1 pound round steak, cut into cubes
1 medium onion, chopped
2 stalks celery, chopped
2 medium potatoes, cubed
3 carrots, sliced
2 Tbsp. dried parsley
½ tsp. dried oregano
¼ tsp. garlic powder
1/8 tsp. pepper
1 bay leaf
1-1/2 cups low sodium V-8 juice
1 cup water


Preheat oven to 325 degrees.  Mix all ingredients in a 3 or 4 quart Dutch oven.  Cover and bake for 2- ½ hours. 

This recipe can be cooked in a c rock pot on medium heat for 6-8 hours.  It can also be prepared in a Dutch oven on the stove top.  Cooking at medium heat for 2 hours.
