Apple Salad - CHI Health, Omaha, Nebraska (NE)

ApplesIngredients

1 large Golden Delicious apple, diced
1 large red apple (Gala, Braeburn, etc.)
1 tsp. lemon juice
1 can (20 oz.) pineapple chunks, drained
1 cup miniature marshmallows
½ cup chopped walnuts (optional)
¼ cup craisins
2 Tbsp. thinly slice celery
¼ cup fat free or light mayonnaise
1 tsp. coconut extract

Preparation

In a bowl, toss apples with lemon juice.  Add remaining ingredients and mix well.  Cover and chill for at least one hour.
