A heart-healthy, yet splendid cake featured


1 cup sugar
4 Tbsp. margarine, softened
1 whole egg plus 2 egg whites
1 Tbsp. lemon extract
1 tsp. vanilla extract
2 cups flour
¾ cup nonfat milk
¼ cup plain nonfat yogurt
1 Tbsp. lemon peel, grated
2 tsp. baking powder


Preheat oven to 350 degrees. Spray a 10 inch Bundt cake pan with vegetable cooking spray. Set aside. Place first five ingredients in a mixing bowl. Start electric mixer at low speed to blend; raise to high speed for 4 minutes. Reduce speed to low and add remaining ingredients, mixing until thoroughly blended. Pour batter into prepared pan. Bake for 45 to 50 minutes or until toothpick inserted in center of cake comes out clean.  Cool cake for 10 minutes; remove from pan.
