Asian Crunch Salad - CHI Health, Nebraska (NE) - Southwest Iowa (IA)

Asian Crunch SaladHere is a healthy salad to incorporate those bright green vegetables into your diet.

Serves 4


1 cup broccoli florets                                                                     
1 cup cauliflower florets               
1 cup cherry tomatoes
½ cup fresh snow peas
2 green onions, thinly sliced
1/2 cup sliced water chestnuts, drained
4 teaspoons reduced sodium soy sauce
1 tablespoon apple cider vinegar
1 tablespoon sesame oil
¾ teaspoon sugar
1 teaspoon toasted sesame seeds
½ teaspoon olive oil
Dash of black pepper


In a large bowl, combine the broccoli, cauliflower, tomatoes, snow peas, and green onions.  Stir in the water chestnuts.

In a small bowl, whisk the soy sauce, vinegar, sesame oil, sugar, sesame seeds, olive oil and pepper. Pour over vegetable mixture; stir to coat.  Cover and refrigerate at least 2 hours before serving.
